Something I love about Japanese curry and rather all curries is the versatility and the ability the creator has in terms of what the fuck goes into it. It’s almost impossible to fuck up so go crazy add whatever veggies you want whatever meat anything. In the recipe below I’ll show you my go-to recipe for making it.
Ingredients
- Japenese curry cubes preferably the Java brand
- Butter
- Sushi rice or any rice will work really (2 cups)
- Ground beef (1 lb) chicken or tofu also works
- Yukon gold potatoes (2-3)
- Carrots (2 Large)
- Onion
- Garlic
- Ginger
- Peppers
- Oyster or shiitake mushrooms
- Assorted seasonings
- Stock
- Rice vinegar
- Scallions
Steps
- Prepare all vegetables; slicing onions, mincing garlic, peeling and dicing carrots/potatoes/ginger, etc.
- Cook rice however you cook rice
- To begin heat up a high walled dutch oven preferably on high heat and melt down your butter
- Sear your protein of choice and season with salt pepper and whatever else you want.
- Remove from the pan with a slotted spoon once browned and reduce the heat to medium
- Throw in your diced onions and a pinch of salt
- After a few minutes add in your garlic, ginger, and peppers and let that cook for a minute
- Next throw in your carrots, potatoes, and mushrooms
- Add in 3 cups of water or stock of your choice and bring to a soft boil
- Once bubbling reduce heat to a simmer and cover your pot for 15-20 minutes
- After time has passed and the potatoes are soft add in the beef and stir
- Add in 1 square of the Java curry mix or whatever mix you got
- Let it dissolve and cook for an additional 10 minutes
- Serve while hot on top of rice with scallions as a garnish
