Ingredients

  • Baby potatoes or small potatoes
  • Corn (Frozen/Canned/ Fresh)
  • Queso Fresco
  • Butter
  • Ground Beed 1 pound
  • Limes
  • Jalepenos
  • Cilantro
  • Onion
  • Garlic
  • Various Seasonings (Cayenne, Chili Powder, Adobo, Sazon, Garlic Powder, Onion Powder)

Steps

  1. You want to start off by boiling the potatoes in salted water or even stock of your choosing. Boil until they are fork tender and then strain smash and season and place on a baking sheet or oven safe pan
  2. Next up is the corn or esquites if you’re mexican. For this melt down some butter and toast some garlic and jalapenos in it, next add in the corn and cook for a few minutes until it browns very slightly. Finish it off by throwing in cilantro, seasonings of your choice, lime juice, and some mexican crema or sour cream.
  3. Now cook the beef however you want just throw it in an oiled pan with some onions and season it however you want.
  4. In the pan with the potatoes add the beef then the corn kind of like a lasagna but not really and bake it in an oven at 350 degrees for a few minutes and then finish it off with a broil because why not?
  5. Take it out the oven and serve either by eating it as is or making tacos or using tortilla chips.
