Notes
A good old salad that is high in protein and has a lot of complex flavors. Takes less than 30 minutes to make and is extremely filling. This recipe is for 4-5 servings
Ingredients
- Salad mix/ Spinach/ Any leafy green
- Italian sausage (mild/hot)
- Large can of chickpeas
- 1 Red bell pepper
- 1 Cucumber
- Olive oil
- White balsamic vinegar
- Parmesan cheese
- 4 ounces of pasta (bowties, spirals, or any non-stringy shape)
Steps
- Pre-heat oven to 350
- Cook pasta according to the package directions
- Drain the chickpeas and roast them in the oven. Season with salt, black pepper, red pepper flakes, and garlic powder
- Roast sausages in the oven as well
- Dice bell peppers and cucumber
- Combine olive oil, vinegar, salt, and black pepper in a small bowl and whisk together
- In your serving bowl place the salad mix, then place in cucumbers and bell peppers
- Once the hot food is done in the oven should be about 15 minutes remove and let it cool down
- Slice the sausages into coins and place both the sausage and chickpeas in equal amounts into your bowls
- Garnish with grated parmesan and your olive oil/vinegarette
- Enjoy.
